Bar Research

The bar that I investigated was the high school bar. This bar is located near the classes and it has existed since 1998 (12 years ago).The bar labors from Monday to Saturday when the school is functioning. From Monday to Friday, their opening time is at 6:15am and their closing time is at 4 pm .On Saturdays, they work from 7am to 12 am. As they have to organize and prepare their products for every day, their arrival is at 6:15 in the morning. They have no choice but to go early because if they arrive later all their planned work will be totally changed, and it will cause them to be unprepared to attend the customers. At 7:15 their sales start because this is the time were the students come to classes. At this time their sales are directed to the parents that stay in the school. For not losing opportunities, the high school bar has set a small kiosk in primary section for increasing their sales. As the owner has to manage two bars, he has to double his staff so that both bars can have good attention. Sometimes he rotates the workers when there is not enough working staff. The real owner of the company is Dr. Carlos Ojera, but as he cant be at his business all the time he left an administrator in charge. The administrator is Santiago Rosero. He got that job because of a relatives recommendation. He is always at the bar helping with sales and checking the business situation. Besides from Mr. Rosero there are other five people that help in the bar realizing different tasks. This five people are Carla Sanchez, Danny Cedeo, Ramulo Cedeo, Yoconda Cedeo, and Melba Mero.

The personal mentioned works on different areas of the business (Bar). Carla Sanchez works as a cashier, Ramulo and Danny Cedeo work as the bar attendants. Melba Mero also forms part of the working team, but the difference is that she works in the financial part as an accountant. Every Friday she comes to the bar and registries all the incomes and outcomes of the business. Also in every end of the month she makes the bars inventory. The workers and attendants receive the basic payment (240) for their work when the works ends. As the school has a significant amount of students, one of the responsibilities of the bar is to attend them as soon as possible because this causes clients satisfaction. Other responsibility is that the bar has to have sanitary controls. Two years ago the bar sold to the students many fried products such as salchipapas and similar foods. Even though these types of products were good for the business because it provided big sales, they had to suspend. The reason for the suspension of the products was because of a government decree that established that unhealthy food had to be vanished from the bars. Now, all the products that they cook are cooked with olive oil, which is healthier , but more expensive. There was a similar problem with the candies that the bar sold. Before, this bar sold imported candies such as Ring Pop, Push Pop, lollipops, etc. These candies were sold in great quantities in recess and in five minute breaks. The sales were going well but the school forced them to quit the candy sales because the students started to eat them in classes. Other problem is that this bar has competence. Even though the high school bar is closer to the, big amounts of students also like to buy in the other bar because of the prices. The high school bar tries to

establish reasonable prices but most of the time they have to increase them because of the inflation. But even with problems like this the administrator says that the competition doesnt affect them, in the contrary they like competition. The reason for them to be so confident is because they have some products that the other bar doesnt have This bar always takes advantage at any opportunity they have. Thats the reason why they close at 4 pm. Normally, the school time is over at 2pm, but after classes what comes next are all kinds of sports practices and additional classes. Thats why the bar prepares lunches for the students. They offer various types of lunches such as rice, meat\chicken and beans, and dietetic food. These lunches are made by one of the workers. Selling lunches after school time really increases the incomes because there are many students that stay after school for their daily sport practices. Also there are teachers that lunch there so it is even better. At recess time there is always a big mass of people trying to buy the food they want. Before the sales strategis were unorganized and the attendants had to quickly attend many people at a time. This wasnt efficient because sometimes they mistaken the peoples change causing the business to lose money . Two years ago they implemented a cash machine method that helped to improve the organization. Now the customers every time they pay for something receive a ticket to go to a specific side of the bar were the attendants take their orders in an efficient way. This method really helped them to make the sales faster than they did before. Even though the cash machine really helps them, there is still a big agglomeration of people because the bar just posses two of them, its not enough for attending big amounts of people in a recess.

Other way of payment is by having an account on the bar. This means that the students parents pay all of what their sons bought at the end

of the month. The students that have an account have to write in a notebook what they are going to consume and their names. After doing that they get immediately attended. This bar has approximately 200 clients just counting the students, so they really have to everything as soon as possible.

Before every recess they have to prepare the products that they are going to sell. The products that they concentrate the most for preparing and ordering from their providers are waters, cokes, empanadas and encebollados. Daily the bar sells 100 bottles of water, 40 empanadas and many cokes. The other products are also sold in big quantities but they didnt have in that moment the information of how much of those products were sold. The bar has a special pizza combo in Tuesdays and Thursdays. This combo consists of a slice of pizza and a glass of soda for $1, 10. The company that provides the bar pizza is Dominos. The bar administrator stated that the product that sells the most in the bar is the encebollado. He says that it is sold in every recess. In the contrary the product that sells the least is bolon.
