Austria was once the center of a large empire stretching from France to Russia and from the Baltic Sea to Turkey, imparting a varied heritage to Austria's cuisine. The Austro-Hungarian Empire played a decisive role in Central European history. Soon after the epublic of Austria was created at the end of World War I it faced the strains of catastrophic inflation . In the early 1930s worldwide depression and unemployment added to these strains and shattered traditional Austrian society. Austria became free and independent for the first time since 1938.

Geography of
Austria is located in Central Europe. It is a predominantly mountainous country . Eight countries namely Italy, Switzerland, the Principality of Liechtenstein, Germany, the Czech Republic, Slovakia, Hungary and Slovenia form the Austrian border. Vienna is the capital of Austria that lies on the Danube River and is partly surrounded by the hills of the Vienna Woods.

Population (2006 est.): 8,192,880. Capital and largest city: Vienna 2,041,300. Other large cities: Graz,; Linz,; Salzburg,; Innsbruck. The pulse of the city can be found along ingstrasse. Probably the most famous grave is Mozart·s hidden somewhere in the St. Marx emetery ³ when he died the great composer was buried in an unmarked pauper·s grave that to this day remains undiscovered.

Apfelstrudel is a traditional Austrian pastry, and is the most widely known kind of strudel. The prefered traditional way to serve it still hot, adding sugar to the taste, though vanilla ice cream or whipped cream are also very popular. To bake a juicy Apfelstrudel, Elstar apples are recommended.

Topfenstrudel
The traditional dough for Topfenstrudel is a flaky dough almost transparent, similar to a phyllo dough. The traditional fillings that are used are apple, cherry, raisin, and cream cheese or "Quark" .

Sachertorte
Sachertorte is a chocolate-cake. It is one of the most famous Viennese culinary specialties. The cake consists of two layers of dense, fluffy chocolate dough with a thin layer of apricot jam in the middle and dark chocolate icing on the top and sides.
