POE
Son aquellos procedimientos escritos que describen y
explican como realizar una tarea para lograr un fin
especifico de la mejor manera posible:
Los documentos POE describen:
 Justificación indicando porque la operación.
 Persona (s) encargada (s) de realizar la actividad
(puesto)
 Cuando se realiza la operación
 Paso a paso descripción de etapas necesarias para
realizar la tarea.
 Que hacer en caso de desviaciones (medidas
correctivas)

POES
Los POES son procedimientos operativos
estandarizados que describen las tareas de
saneamiento. Se aplican antes, durante y después de
las operaciones de elaboración. Parte complementaria
de los BPM.
 Seguridad de agua.
 Limpieza de las superficies de contacto con el
alimento.
 Prevención contra la contaminación cruzada.
 Higiene de los trabajadores.
 Contaminación.
 Agentes tóxicos.
 Salud de los empleados.
 Control de plagas y vectores.

1998, con el DS 007- 98-
SA se recomienda su
implementación gradual
en la industria
HACCP alimentaria.

Norma Sanitaria para la
elaboración de Aplicación del Sistema
Yogurt Frutado HACCP en la Fabricación
de Alimentos y Bebidas.
La aplicación de los siete principios del Sistema de APPCC
requiere seguir una secuencia lógica de fases.
 Paso 1:Formación de un equipo HACCP.

semidescremada. Los insumos utilizados para preparar este yogurt son: leche fresca
semidescremada, leche descremada en polvo, fermento láctico probiótico y jalea real.
