Mushroom-Cheese melt Ingredients:

1. Crimini mushrooms 2. Spring onion 3. Bell pepper 4. Garlic 5. Parsley or cilantro 6. Thai green chillies 7. Butter 8. Salt and pepper 9. Cheese slice 10. Bread : 8 oz sliced : 10 chopped into 5mm pieces : 1, chopped into small bits : 3-4 cloves, very finely chopped : 8-10 springs : 1-2 (optional) : 1 tbsp : To taste :6 : 6 slices, toasted

Directions:
1. 2. 3. 4. 5. 6. 7. 8. 9. Preheat oven to 350F. Heat butter in a pan. Saute thai chillies, garlic and onion in that order (don't let the garlic burn). Once the onions are almost cooked, add the chopped bell peppers. Saute for 3-4 minutes (you want the peppers to be crunchy). Add the chopped mushrooms and cook for 3-4 minutes. Add salt and pepper to taste and cook for some more time. Add chopped parsley or cilantro for seasoning. Now add this mix on toasted slice of your favourite bread (I enjoy plain white or a multi-seed bread). 10. Add a slice of cheese on top and put it in the preheated oven. 11. Take the slice out one the cheese has melted and just begins to flow. 12. Serve hot!
