dana) salt to taste Method: 1.Soak all the ingredients except salt in water for 2-3 hrs. 2. Grind it to a smooth paste and add salt and mix it. Keep the batter overnight to ferment. 3. Use this Batter to make any kind of dosas,uttapam I presoak the rice and Urad dal(white lentil) separately and then grind them. Mix it well , add some salt and leave it for fermentation. This fermented batter is then used to make Idlis, Dosa and Uttapam. Since I did not have any batter to make this , I googled for an instant recipe and came across the LOVE4COOKING blog and followed the Instant Onion Uttapam recipe. Its a very easy recipe and the Uttapams/Pancakes came out great. My kids loved them and did not have much left to take some decent clicks. Now I would call it an almost instant recipe as we still have to keep the mixture aside for half an hour. But that half an hour goes quick..believe me. Also that time could be utilized for chopping the veggies (onion,tomato, green cilanto leaves, green chillies). If you still have some time left you could enjoy a cup of tea and watch your favorite show. Ingredients : Instant Uttapam Mix 1 1/2 cup Semolina /Sooji/Rava 1/2 cup rice flour 1 cup yoghurt 1 cup water salt to taste

Preparation : Take 1 cup of yoghurt and mix about 1 cup water. Whisk it well. Make it like buttermilk consistency. Now to this add semolina and rice flour. Mix it well. Cover and keep it aside for half an hour for fermenting. Now chop the veggies (1 red onion, 1 tomato, 2-3 green chillies and a handful cilantro leaves). After its been resting for 1/2 hour, the Uttapam mixture will be a bit dense as the semolina absorbs most of the water. Add about 1/2 cup to 1 cup water , mix it well. Add salt and the chopped veggies. Heat a griddle/Tawa. When its hot, pour about 1/4 cup batter onto the griddle and spread in a circular motion. Apply some oil around the Uttapam. Once its cooked turn it and let it cook on the other side. ngredients:

1 chopped tomato

2-3 chopped green chillies

Method:

1.Mix all the ingredients except bread slices and make a thick paste.

2.Spread it on each bread slices.

3.Cook it on hot tava (with ghee or butter if required).

4.Serve hot with sauce or green chutney. Ingredients: For VegetableCutlet: 2 Boiled Potatoes

1/2 cup shredded Cabbage 1/2 cup finely chopped onion salt to taste 3 slice bread Bread Crums 1 tesp chilli paste oil to fry For Filling: Burgers Tomato slices Cucumber slices onion slices Tomato Sauce Sandwich spread Salt Black Pepper Butter Method: 1.Mix all the ingredients except bread crums and oil of cutlets ,make dough.Now take a small portion of dough and shape them round.Roll each round in bread crums and either deep fry or shallow fry.Cutlets are ready. 2.Take a Burger.Cut it from centre.Cook lightly it on tawa with butter from inside. 3.Now spread a spoon of sanwich spread and tomato sauce on a piece.Put a slice of onion,tomato and cucumber.Sprinkle a pinch of salt and black pepper.You can put salad leaves also.Put a cutlet on it.Pack it with other piece with the help of a tooth pick. 4.Serve it with chutney and sauce.

PREPARATION:
1. Soak idli rice and black gram for 8 hours.

2. Grind them along with flattened rice, cooked rice, salt into a dosai batter consistency. 3. Keep the batter in warm place for 12 hours to ferment. Usually this is done overnight. 4. Heat the iron griddle or non-stick tawa well. 5. Pour a spoonful of batter in the center, spread with the back of the spoon to a thin round. 6. Garnish with all the shallot, tomatoes, green chili as needed on top. When done
thappa deserves to be called the indian pizza as it lends itself to several toppings, the most popular being crisp cooked onions. You may also try other combinations such as onion and tomatoes. Usually vendors spread the topping over the uthappam batter and press it in well with their wet fingers. But, to avoid hurting your fingers, use a spatula if youre a novice!

Combine the dosa batter with little water and salt in a bowl and mix well. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth.

Pour cup of the batter on the tava (griddle), spread in a circular motion to make a 150 mm. (6") thick uttapa and cook on a medium flame for a minute.

Add 1 tsp of butter in the centre, smear evenly and cook for 2 minutes. Sprinkle 2 tbsp onions, 1 tsp coriander, tsp of green chillies and tsp of garam masala

Turn over and cook on the other side till it turns light brown in colour. Repeat with the remaining ingredients to make 3 more uttapas. Serve immediately with sambhar, coconut chutney and green garlic chutney.

Chilli Cheese Toast & Sunday Omelette


February 16, 2013 1 Comment The word omelette (or its synonym at our home Sunday) is enough to light up my dear hubbys face with a 1000 watt smile. We usually have omelettes for breakfast on Sundays, and I like to deck it up with (or rather he likes to munch it along with) chilli cheese toast, sauteed vegetables and a glass of mosambi/sweet lime or water melon juice. So heres this Sundays breakfast recipe!Ingredients for Chilli Cheese Toast: 1. 2. 3. 4. 8-10 Bread Slices 2 Onions (finely chopped) 2 Green Capsicum (finely chopped) 2 Green Chillies (finely chopped) 100 gm Cheese (grated) Except for the bread slices, mix all the ingredients together. Spread the cheese mixture evenly over the bread slices ( I use whole wheat bread). Set the oven to toast mode and toast at 150 degree Celsius for 5-7 minutes or till golden brown. Serve hot with a sauce of your choice.

Ingredients for Omelette: 1. 2. 3. 4. 5. 3-4 Eggs cup Green, yellow, red capsicums (diced) 2 Mushrooms (diced) 1 Onion (diced) 1 Tomato (diced) 2 tbsp Butter 1 tbsp Milk 2 tbsp Grated Cheese tsp Pepper Powder 1 tsp Italian mixed herbs (optional) Salt to taste Heat a pan and add butter. When the butter melts add all the chopped vegetables and salt. Let them cook till all the veggies become tender. Sprinkle mixed herbs and pepper powder. Blend well. In the mean time beat the eggs well along with milk and salt. Milk makes the omelette soft and fluffy. Pour the egg mixture on the vegetables and sprinkle grated cheese on top.
