Easter Bun – original recipe

2 cups sugar, brown


1 cup stout
1 tbsp molasses
1 cup milk
6 cups All purpose flour
6 tsp baking powder
1 tsp salt
2 tsp vanilla
1/2 tsp almond essence
1 tsp cinnamon
1 tsp nutmeg, grated
2 cups mixed fruit (raisin, mixed peel) soaked in stout to rehydrate
1 cup grated coconut
4 eggs
4 tbsp melted Blue band margarine
2 tbsp honey

Method
1. Heat milk, stout, molasses; add sugar .Do not boil, heat to dissolve
sugar.
2. Cool milk mixture.
3. Sift together all dry ingredients.
4. Beat eggs and mix with milk mixture and 2 tbsp melted margarine,
vanilla
and almond essence.
5. Add drained fruits and coconut.
6. Pour into 2 greased and floured loaf pans.
7. Bake in a 325 degree oven for 45-60 minutes or until skewer inserted
comes out clean.
8. Combine honey and remaining margarine and heat gently. Use to glaze hot
bun and allow to cool on wire rack.
