STE: Can you please give us a broad overview of The Inn
and its location?

ar enthusiasts who have always
considered buying a Jaguar to
be too extravagant should take
another look,” according to Tony Anton,
general sales manager of Jaguar of Great
Neck. “Because of the current economy,”
says Anton, “there are great deals going
on right now. The $899 starting point
for leasing the all new 2011 Jaguar X
has drawn in a tremendous number of
people.” And with interest rates so low,
it’s good time to buy one as well. “Where
a lot of automobile brands have been
having trouble getting loans and credit,”
says Anton, “we’ve been around so long
that we have great relationships with
some of the larger banks.” According to
Anton, “Jaguar has always been known
as one of the nicest driving and sexiest
cars. Customers tend to have more of a
relationship with their Jaguar than they
do any other cars. When someone buys
a Jaguar, they continue buying Jaguars
until they can no longer drive.” The

A
s a single, female traveler who keeps up with the news, I confess, I had
reservations about being at Mexico City Airport, alone, in the middle of the
night.  But after more than twenty hours of trains and planes I arrived without
incident, and felt perfectly safe awaiting the arrival of my driver. 
 
We drove north out of the city for nearly an hour.  When the road gave way to dirt track,
a further twenty minutes’ journey brought us to Rancho Las Cascadas. Thanks to a
six-hour time difference, I was up bright and early the following morning and my first
impression in daylight was of being ‘in the middle of nowhere’… in a good way. 
 
Set on a plateau at an altitude of 7500 feet, among beautiful mountains, the scenery here
is breath-taking.  After breakfast, I was introduced to thirty well-trained horses. My first
ride took me through wide-open fields and as we cantered across unspoilt countryside, I
realized that the only noise reaching my ears was made by our little group.  
 
Dinner my first evening was a four-course feast of Mexican flavors with an international
influence.  The table was beautifully dressed and guests from around the globe chatted
happily as wine flowed.  After coffee, being a true Brit, I suggested we move our party
through to the well-stocked bar.  There we made enthusiastic use of pool table and darts
board until the early hours.
 
The following morning a nearby town held its weekly market, where stalls offered a
wide range of products, interspersed with delicious snacks from many open air cafes.  I
transformed into “tourist-shopping-mode” and immediately snapped up some bargains.
We hesitated at a small parade of authentic Mexican shops on our way back, where
several of us bought locally-produced textiles at prices we couldn’t hope to see back
home.
 
The ranch itself offers exceptionally high standards of comfort and decor. An awe-
inspiring infinity pool and sun terrace over-look one of the three natural waterfalls that
give the ranch its name. I befriended a fellow single-traveler and the two of us spent a
happy afternoon walking the track of the river until we discovered the second waterfall. 
I confess we abandoned our mission to the third, in favor of returning to enjoy an ice-
cold beer in the Ranch’s hot tub… truly blissful!
 
I’ll be sorry to leave and I’m already planning to return again to Rancho Las Cascadas.

STE: Can you please give us a
broad overview of The Retreat
and tell my readers what

location in particular such a

a unique retreat and spa
located in the picturesque
Catskill Mountain Forest
Preserve (offering) luxurious, charming
accommodations and a multitude of
services and programs. We dropped the
word inn from our name in favor of retreat
since we do not have room-only rates. Our
clients come to us with specific goals, be it a
weight loss or stress reduction and we bring
them to their objectives.
We follow the centuries-old European spa
tradition in focusing on total wellness,
effective natural weight loss, relaxation,
stress management, physical fitness and
internal cleansing.
In addition to our classic spa packages, we
also offer customized 3, 7, 10, 14, 21 & 30-
plus day plans for accelerated weight loss,
detoxifying diets, juice fasting and raw food
therapy. These rigorous internal cleansing
and weight loss packages incorporate
yoga, chi kung, meditation, deep breathing
exercises, dry skin brushing, rebounding,
massage therapy, hydrotherapy, and
aromatherapy, sauna, nature walks and
the outdoor activities that remain the
cornerstone of our spa philosophy.  They
are, however,
more result-oriented than our classic
packages.
Our goal is to help our clients to jump-start
their health goals and develop healthy
habits. Our clients leave our spa with an
exercise, diet and relaxation plan for life.
We provide them with the necessary tools
and techniques that facilitate and empower
them to continue healthy and happy living.
After our guests return home, we are able to
provide them with additional wellness, life
and empowerment coaching sessions over
the phone and through e-mail in order to
ensure they continue to fulfill their personal
goals and achievements.
The gourmet meals served as part of our
classic spa packages are health conscious
in a traditional European sense; you dine on
farm fresh, nutritious, elegantly prepared
dishes inclusive of free range poultry and

seafood.  The detox/weight loss menus
focus on organic, farm fresh, organic
vegetables and fruits, high protein
sprouts, seeds, nuts, legumes and whole
grains all healthy and exquisitely prepared.
Much of the produce is grown on the

We are very small facility (15 rooms)
so personal attention to every detail of
our client program along with all the
charm of a European country retreat, a
superb spa services create very unique

our wellness plans are personalized and
tailored specifically to every guest’s needs

series is informative, inspiring, all practices

amenities address the main elements of
well-balanced life — exercise, nutrition,
peace of mind and care of the body. Indoor
exercise amenities include 60-ft pool, Gym
yoga studio. For some exercise options we
offer Yoga, Pilates Mat Work, Belly Dancing,
African Dancing, Aqua Aerobics and Aqua
Jogging, Tai Chi, Boot Camp, Fencing,
Abs Classes and meditation. Outdoor
Fitness Programs include power walking,
Nordic walking,Cross Country Skiing &
Snowshoeing, tennis on our 40 acre private
island, guided mountain hiking and biking
(we have Trek hybrid bikes). Guests can
also fly fish on Esopus Creek, which flows
through our property.
Our health and wellness programs are
focused on balancing and rejuvenating the
mind, body and spirit.  Our approach is
to integrate naturopathic and allopathic
medicines in order to address all the
concerns of the individual client.  The
expertise of a consulting doctor,
naturopaths, fitness instructors, spa
therapists, nutritionists and alternative
health practitioners may be called upon in
the creation of individual programs to
effectively treat goals such as weight-
management, toning and slimming, anti-
aging, stress relief and general well-being.
From Zen meditation in the morning to
gentle yoga in the evening, we help our guest
remain mindfully present from moment to
moment throughout your day.
STE: What kind of dining options and
restaurants are there on premises?
Copperhood (EW): Our raw plant based
food program features wild or naturally
grown foods. “Living foods” are prepared
without cooking, as cooking destroys much
of foods’ vitamins and enzymes. Our raw
food program is vegan: we do not serve
meat, dairy, or any other animal product.
However, our raw food dishes are not simply
raw foods. We prepare gourmet dishes in a
way that makes them easy for the body to

assimilate. The dishes are a sight to behold,
and delicious as well. Our living plant foods
include young greens, sprouted nuts, seeds
and grains, cultured preparations and
dehydrated foods. They give radiance and
positive energy, clear skin and shining hair
and eyes plus they help in shedding excess
pounds, and feel great inside and out.
Our detoxing and weight loss juice fast
programs feature delicious and satisfying
concoctions extracted from seasonal, raw
fruits and vegetables and all the organic
produce is grown on the premises or by
an affiliated organic farmer in the area. Our
health cocktails are extracted just minutes
before being served streamside or fireside,
in elegant stemware, to celebrate health.
Our homegrown wheatgrass, unparalleled

Our classic spa program menu is inspired by
