Steamed chocolate pudding

1 pt basin 2 pt basin 4 pt basin


Plain cooking chocolate 25 gm 50 gm 100 gm
Plain flour 55 gm 110 gm 225 gm
Caster sugar 55 gm 110 gm 225 gm
Cocoa powder 7 gm 15 gm 30 gm
Skimmed milk 65 mls 125 mls 250 mls
Egg ½ 1 2
Baking powder ½ tsp 5 gm 10 gm
Margarine for greasing
Method

1. Lightly grease a pudding basin with margarine.


2. Melt the chocolate in a bowl.
3. Combine the remaining ingredients in a separate bowl
4. Add the melted chocolate and mix quickly until combined
5. Spoon the batter into the basin
6. over with a buttered, pleated sheet of greaseproof paper and secure with string
7. Place the bowl in a microwave and cook for 2 minuets, allow to rest and repeat,
as the sponge nears completion lower the cooking time to 1 minuet at a time.
Continue until the sponge is cooked.
8. Allow to rest for five minuets before removing the lid and running a knife
around the edge to loosen. Invert onto a serving dish.

Vanilla Custard

Sugar 60 125 gm 250 gm


Egg yolks 3 6 12
Milk 250 mls 500 mls 1 lt
Vanilla pod or essence
Method

1. Break the egg yolks into a bowl and whisk in the sugar until smooth.
2. Boil the milk with the vanilla
3. Pour half the boiling milk onto the egg mix and whisk until combined.
4. Return the egg and milk mix to the pan and stir with a wooden spoon until
thickened (but not boiling).
5. Remove from the heat and pour through an strainer into a clean bowl or jug.
