Caramelised Onion and Zucchini Pilaf

INGREDIENTS
300g basmati rice
50g butter
2 onions, finely sliced
2 tsps black mustard seeds
2 tsps cumin seeds
2 garlic cloves, finely chopped
Ginger, a thumb-sized piece, finely chopped
1 zucchini, sliced 2 tomatoes ripe, diced
1 cinnamon stick, broken in half
2 cardamom pods
1 lemon, 2 strips of zest
