STUFFED PEPPERS WITH HARISSA
This elegant-looking dish is bursting with Middle Eastern flavour.
SERVES 6
✣1 onion, chopped
✣1tbsp olive oil
✣2 cloves garlic, finely chopped

✣1tsp ground cumin
✣200g (7oz) puy lentils, rinsed
✣400ml (14fl oz) vegetable stock
✣150g (5oz) spinach leaves

✣2tbsp pine nuts, toasted in a dry pan

✣2tbsp chopped parsley
✣6 red peppers, halved and deseeded
