First things first: what is gluten and how do you begin a gluten-free diet.
What is gluten?
Let us take a look at the G
word, shall we? Gluten is a Latin word that means glue
and is used as a general name for the various types of proteins that are found in certain grains, such as wheat, rye, barley, and more. Gluten is indeed an apt name because the mixture of proteins in grains acts like glue which helps food maintains their shape.
Pastas, breads, baked goods, cereals, beer, sauces, salad dressings, etc. are made from grains rich in gluten. They are harmless in most cases, especially when you do not experience any adverse effects after eating the above-mentioned grain products. However, for some people, that is not so.
There are those who are sensitive to gluten. When they consume way above the level their body can tolerate, they experience minor symptoms, such as bloating, diarrhea, upset stomach, and abdominal pain. This is called gluten sensitivity and the symptoms result from the body’s inability to digest gluten.
In severe cases, gluten causes adverse effects, especially with people who are inherently extremely gluten intolerant. When they eat food with gluten, they suffer inflammation and damages in their intestine lining, which makes it hard for the body to absorb nutrients. This disease is called Celiac disease or commonly known as wheat allergy and can lead to malnutrition and excessive weight loss.
Gluten is not just hard to digest. As mentioned earlier, it is named after the Latin word for glue. This protein also thickens the blood and acts as a coagulant, impeding the normal healthy flow of blood, oxygen, and nutrients in the body. And
