In this chapter, you will learn:
How to make the perfect pie crust
Secrets to making the perfect pie
Making the Perfect Pie
No matter what kind of pie you are going to bake, sweet or savory, the crust is one of the most important parts. If you want to make the perfect pies, you are going to have to learn how to make the perfect crust. Here are some tips that you can put to use to ensure your pie turns out perfectly every time.
Making the Crust
If you are aiming for a flaky crust, you only want to mix your dough until large pieces form. Over mixing it can take away the flakiness of the crust. To determine if your dough is done mixing squeeze some together, if most of it holds together with a few crumbly pieces remaining, you are done.
Keep all ingredients for the crust cold. For example, ice cold water should be added to dough and butter should come straight from the fridge.
Even if a recipe doesn’t call for it, add an egg yolk to the mixture, as this adds more fat making the dough easier to handle.
Use as little water as possible when making the dough. Always start with the smallest amount given in a recipe and slowly add 1 tsp at a time from there.
Adding 1 tbsp. of lemon juice or vinegar
