The Complete 15-Minute Gourmet - Paulette Mitchell

    PEACH MELBA

    Makes 4 servings

It’s hard to beat a juicy summer peach. Pair it with raspberries and you have an incomparable combination. I serve this dessert often for my family and warm-weather guests.

2 peaches, peeled and cut into ½-inch wedges

4 large scoops premium vanilla ice cream

    ¾ cup Raspberry Sauce

Sprigs of fresh mint for garnish

    • For each serving, arrange the slices from half a peach in a dessert bowl. Top with 1 scoop of ice cream and drizzle with about tablespoons of the sauce. Garnish with a mint sprig.

    BALSAMIC-GLAZED STRAWBERRIES WITH ICE CREAM

    Makes 4 servings

My appreciation for balsamic vinegar is always enhanced when I visit Italy, where the vinegar is aged for up to 100 years, resulting in a thick, syrupy sweet richness. Here, cooking the vinegar with sugar gives it some of the qualities of those pricey imported aged balsamics, which are traditionally drizzled over fresh berries. Sometimes I put a thin layer of crumbled amaretti cookies in the dessert bowls before adding the scoops of ice cream.

    2 tablespoons balsamic
