Purpose: Though easily made, don’t let its simplicity fool you!
This dish is perfect for a hearty and healthy snack. Why make
this? First of all, it is jampacked with antioxidants obtained
from the honey, carrots, cranberries, and almonds, which all
defend our body against the harmful effects of free radicals
and oxidative stress! Secondly, its ingredients are loaded with
high levels of several vitamins and minerals, such as Vitamin
C in mangoes and lemon juice, Vitamin A in carrots, and
magnesium in almonds, to name a few. Furthermore, it is not
only a vegetarian dish, but it is also gluten-free. And lastly, it
also punches a symphony of flavors – sweet, sour, salty, and
tangy. Indeed, this dish is a fiesta for your mouth! To
summarize, this dish has it all – easily made, delicious,
flavorful, and most importantly, health-friendly.
Ingredients 1. ¼ cup olive oil (organic, extra virgin)
2. 2 tablespoons lemon juice
3. 2 tablespoons honey
4. ¼ teaspoon of salt
5. 1 ½ cups yogurt (preferably organic, fat free)
6. 10 medium carrots, shredded
7. ½ cup dried cranberries
8. 3 pieces of medium-sized mangoes, diced
9. 1 small red onion, chopped
10. ½ cup chopped almonds
Procedure 1. In a small bowl, combine the olive/canola oil, lemon
juice, honey, salt, and yogurt. This will be known as
the yogurt mixture.
2. Whisk these ingredients until they are evenly well-
blended.
3. In a medium-sized mixing bowl, carefully toss the
carrots, cranberries, mangoes, red onion, and
almonds. This will be known as the carrot mixture.
4. Pour the yogurt mixture over the carrot mixture and
toss.
5. Place the salad into a serving bowl and serve. You can
also refrigerate it after preparation. It is best served
chilled.

Again, this recipe does not only possess a symphony of flavors (sweet, sour, salty, and
tangy), but is also rich in nutrients and antioxidants. After preparing the dish, all the ingredients
must be properly and evenly mixed. The carrots must be shredded, and the mangoes diced in
small, square shapes. This is done so that not one ingredient overpowers another with every
chew and swallow, making every bite just as exciting and flavorful as the next, leaving you
wanting for more after each bite. After finishing the dish, it should make you feel refreshed and
satisfied. It is a perfect snack that can be easily prepared, especially when you don’t have the
luxury of time to make complex dishes, but still getting a plethora of nutrients and antioxidants!
