Ingredients
18oz. Can Tomato Paste (12 + 6 oz)
28oz. Can Diced Tomatoes
28oz. Can Tomato Sauce (option: substitute tomato sauce with enchilada sauce or taco sauce)
31oz. Can Re-fried Beans
2x12oz (dry wt). Can Sliced Black Olives
8oz. Fresh Portabello Mushrooms
1 Each: Green, Yellow, Orange, Red Bell Peppers- diced
Add 1 tsp sugar and 1tsp lemon juice to enough water to dissolve sugar and mix well. soak in air tight
bowl over night in just enough water to cover them all.
2 Cloves fresh garlic - crushed
1 Bunch green onions
cut green section into 1" pieces (about 1 cup)
1 vidalia Onion, chopped
1 red onion sliced into rings
1 cup dry black Beans
1 Cup Kidney Beans
2 Cups white beans (substitute jarred beans?)
Precook dry beans until soft. Add sprigs of fresh herbs/spices to beans? Cook separately to maintain
colors.
8oz Sliced Mushrooms
1/2 Cup Red Onion Sliced Rings
Saute in butter until onions are lightly glazed. Separate onions and mushrooms. batter mushrooms and
fry til crispy.
Divide one can of olives in half. mix one half with remaining half cup of red onion. soak in
vinegar/water over night. Put other half of olives into bell pepper container.
1 lb Chicken Breasts
Cut into thin strips. Marinade overnight in (1 table spoon vinegar, 1/3 cup water, 1 table spoon lemon
juice, 2 teaspoon chili powder, 1/2 teaspoon garlic, 1/2 teaspoon black pepper, 1/3 cup taco sauce, 1/3 cup A1, ).
Cut into bite size pieces and grill in juice sprinkling 1 table spoon of black pepper during cooking time. Grill
until meat is crispy.
1 lb mini meatballs
1 lb ground turkey burger. 1 pkg tempo Italian meatball kit, spices: fajita, 1 table spoon chili powder.
bake 45 min @350 3/4-1 inch balls.
1 lb Sausage Meatballs
1lb Bob Evans Ground Italian Sausage
1 pkg tempo Italian meatball kit, spices: tea spoon each of oregano, cumin, and crushed red peppers.

Hot Pepper Bombs
1 can re-fried beans
1 pkg unseasoned goat cheese
1 pkg taco seasoning
hot peppers to taste
1 avocado
puree hot peppers and mix with other ingredients well. roll mix into 1 inch balls and bake until crisp.
Spices
2 table spoons oregano
1/2 cup home made chili powder
1 table spoon cumin
1 table spoon brown sugar?
1 teaspoon coriander?
1 teaspoon dry mustard?
1 pkg dry onion soup mix
bay leaves?

Homemade Chili Powder Recipe:
Ingredients
1· 3 ancho chiles, stemmed, seeded and sliced
3 cascabel chiles, stemmed, seeded and sliced
3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
1 clove fresh garlic
1 tablespoon fresh dried oregano leaves
1 teaspoon paprika
1 tablespoon minced onions
Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the
pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.
Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika and onion. Puree
until a fine powder is formed. Allow the powder to settle for at least 5 minutes before removing the lid of the carafe. Pour gently. Store
in an airtight container for up to 6 months.
Combine all ingredients except bell peppers into large pot. cook on low heat stirring until well mixed. Add
meats and continue cooking. Add bell peppers just before serving.
