German Pancake

Ingredients! ! Cup Milk! Cup Flour! Pinch of Salt! 4 Eggs! 1 Tablespoon Butter! 1 Tablespoon Vegetable Shortening! Powdered Sugar! Lemon Wedges! Berries to Garnish! !

Serves 2! ! This one is a staple of the Milwaukees North ShoreCourtesy of Jack Pandls Whitesh Bay Inn.! ! Preheat oven to 425.! Mix the our, milk and salt, and blend until smooth. Add eggs and blend until smooth. Melt butter and vegetable shortening over medium heat in a 9-10 inch, slope-sided pan with an oven proof handle. Add pancake mix and cook until the bottom is brown. Now you have to ip it. Make sure there is still loose batter in the pan when you ip. You may need to use two spatulas. (Note: After a failed rst attempt, I went from one pan to another. Flipping these buggers isnt easy). ! Cut an X across the pancake all the way through to the pan. Place pancake in oven and bake until done, about 6-10 minutes. It should rise 3-5 inches around the pan. ! Cut into two slices, garnish with powdered sugar, lemon, and berries, if desired. ! ! Once again, thank you Pandls ! Whitesh Bay Inn! ! !
