Fantastic Fairy Cakes Recipe

Makes 12 cakes Ingredients: 125g softened butter 125g self-raising flour 125g caster sugar 1 tsp vanilla extract 2 tbsp milk 2 free range eggs

Method: 1. Preheat oven to 190C/375F/Gas mark 5. Place the paper cakes cases in the baking tray. 2. Beat the eggs together. 3. In a separate mixing bowl beat together the butter and sugar until pale and fluffy. Using an electric whisk is quickest (and easiest!) but a wooden spoon is also fine. 4. Mix in the eggs a little at a time, then beat in the vanilla. 5. Sift in half of the flour and fold into the mixture. Add the milk and the rest of the flour and fold until well combined. 6. Spoon into the tin and bake for 12 minutes or until risen and golden on top. Allow to cool for ten minutes on a rack before removing from the tin.

To Decorate Ingredients: 100g / 4 oz icing sugar 2 tbsp freshly squeezed lemon or orange juice Method: 1. For the icing, mix the lemon juice into the icing sugar and stir until well blended. 2. Once the cakes have cooled, drizzle the icing over them. Add sprinkles and other decorations as desired!
