When you go to buyyour crab legs make sure to buy only frozen ones. Sometimes the market will pre-thaw as aconvience, but you want to avoid these because they begin to lose freshness as soon as they arethawed. 8oz to 1lb of crab legs should be plenty for one person. To thaw frozen crab legs, placethem in the refrigerator for about eight hours. *Tip* Use a water tight container with a rack to icewater to drain. Pour two cups of water into a large pot or steamer, add 1 tablespoon of salt and bring to a boil.

Place crab legs in the bottom of the pan on a rack on in a steaming backet.

As the water begins to boil start timing.

Steam the crab legs for between 5 - 7 minutes, until you can begin to smell their aromaand are warm. Take care not to overcook the legs as they have already been cooked before.

Half fill a large saucepan with cold water and add a tablespoon of sea salt and seasoningif you wish.

Bring the water to the boil and then drop the crab legs in.

Reduce the heat slightly and allow the crab legs to simmer and heat up for 5 - 7 minutes.

Remove from the water and rinse the crab legs. Serve hot.
