MUFFINS.

Ingredients:

2 cups (310g) self-raising flour cup (60g) caster sugar 2 teaspoons baking powder 2 eggs 1 (375mL) milk or butter milk 160g butter, melted Cup cake patties
Preparation time 15 mins. Total cooking time 25 mins

Method:
Preheat the oven to moderately hot 190C. Brush a 12-hole muffin tin with melted butter or oil. Sift the flour, sugar and baking powder into a bowl. Make a well in the centre. Add the combined beaten eggs, milk and butter. Stir with a wooden spoon until almost smooth. The ingredients should all be moistened Spoon the mixture evenly into the tins (if you only have a 6-hole tin, you can cook the muffins in 2 batches.) Bake for 20-25 minutes, or until golden brown. To test the muffins, insert a skewer in the centre. It should come out clean if they are ready. Loosen the muffins from the tin and cool on a wire rack CHOCOLATE: use the basic muffin recipe and sift 2 tablespoons of cocoa powder ion with the flower. Add 50 g of chopped chocolate chips bits after the egg mixture. Use either dark, milk or white chocolate or a combination of all 3. BANANA: use the basic muffin recipe but replace the caster sugar with raw sugar and decrease the butter to 100g. Add 2 teaspoons of ground cinnamon 1 cup of mashed banana and 3 teaspoons grated orange when adding the liquid. These muffins can also be made using half wholemeal flour and half white flour.
