THE MAKING OF AN OMELETTE It was sometime I had been thinking about having high protein/calorie breakfast and I was

doing with sprouts, chapati and others. I do a plethora of things in the morning, at home(apart from ablutions). I eat few, rather quite a few mint leaves and then drink jeera water, swallowing the jeera floating in water, drink bournvita and then my actual breakfast starts. Either a chapati, or few idlis, or sprouts. Wait - before my breakfast I need to drop my wife to the apartment gate, wait till she crosses the road(Yesss..I do that daily), then re-enter my flat. Eating an omelette cropped up in my mind, since I knew it was a high protein food. Pushing me in the direction was my disliking towards eating chapati at 7:15ish in the morning(I am kind of OK with idli at that time, but chapati...hmm..) Finally I announced at home that I was going to make an omelette tomorrow. Preeti(my mousi's daughter) gave a neutral look(as if I was dirtying the kitchen), while my wife ensured that I use a phulka tawa(a damn old one) for omelette. She took my confirmation for the same that night. The phulka tawa, I bet is not more than 6 inches in diameter and I was not sure of my skills that that will ensure omelette of exactly less than or equal to 6 inches..Eitherways, it was late, and I nodded in confirmation that I shall use only that. (Actually, I was reading - One night at call centre,and I was curious to know whether Priyanka is going to marry that American Ganesh or Indian Shyam) The other factor that was bothering me was - I am not that fond of omelette. While I am OK with the smell(odour, some of you might correct me), I dont rejoice eating any egg product. But it can be made quite fast you see!! The other aspect/background to my omelette was - I used to have a stomach upset everytime I ate an egg product. I thought - if I cannot digest the egg now, when will I digest? while I am 60? It has to be NOW, I said Today morning I took the other tawa(that curves up towards the edges). Let my wife find out that I did not use that tawa she gave, I thought. I broke the egg carefully and patted myself for not having spilled anything. After the egg was poured onto the glass, I started to think - Does the yolk contain protein or the egg-white contain protein? The other thought rushed in - "Just eat quickly and catch the 505 bus. It does not matter!!" Anyway, I mixed it with some onions, chillies and salt, and poured it onto the tawa, to make an omelette
