-History Sauvignon is derived from the French word for wild Once thought to be descended from the Biturica varietal, the grapes used by the Romans. Can grow in a variety of climates, including U.S.A., Australia, and Europe. Has been called the king of grapes. Primary varietal used when producing Red Bourdeaux wine. The offspring of Cabernet franc and Sauvignon blanc. Often stored in oak barrels. Has a long history with Italian and French winemakers. One of two varietals that produced the Super Tuscan wines.

-Characteristics Green bell pepper Will show different mineral flavor characteristics depending on terroir. California planting and Bourdeaux have quite similar characteristics. Pairs well with fatty red meats such as lamb. Mint Black pepper Eucalyptus leaf Asparagus Jam Black in color

-Facts 60% of the wine grown in France comes from the Bourdeaux region. Optimum soil is gravel

The grape itself is small with a thick skin, perhaps this is why it has so many tannins in the end product?
