Pineapple Jalapeo Pork Ribs

Serves 4 1 tablespoon Wildtree Natural Grapeseed Oil 1 pound pork spare-ribs, boneless 1 tablespoon salt 1/2 tablespoon ground black pepper 3 tablespoons Wildtree Pineapple Jalapeo Jam 1/4 cup chopped pineapple, fresh 1/4 cup pineapple juice Heat Grapeseed Oil in a medium saut pan over mediumhigh heat. Lightly season the spare ribs with salt and pepper and place in the pan. Brown each side before turning, about 2 minutes per side. Transfer the spare ribs to slow cooker and add the Pineapple Jalapeo Jam, chopped pineapple, and pineapple juice. Cover and cook until spare ribs are fork tender, about 4-6 hours on high or 6-8 hours on low.

Chicken Enchiladas

Chicken Enchiladas
Serves 12 1 medium onion, finely chopped 1 bell pepper, thinly sliced 1 jalapeo, seeded and finely chopped 1 tablespoon Wildtree Natural Grapeseed Oil 2 cloves garlic, minced 4 cups cooked, shredded chicken 1 cups Wildtree Nut-Free Mole Sauce 1 cup shredded cheddar cheese 1 cup shredded Monterey jack cheese 1/2 cup minced fresh cilantro 12 (6-inch) soft corn or flour tortillas Preheat the oven to 400F. Heat the oil in a large saucepan over medium heat. Add the onion, bell pepper, jalapeo, garlic and 1/2 teaspoon salt. Cook, stirring often, until the onions and peppers have softened, 5-7 minutes. Transfer to a large bowl, add the chicken and Wildtree Nut-Free Mole Sauce, and stir to combine. Add 1/2 cup cheddar cheese, 1/2 cup Monterey Jack cheese and the cilantro and toss to combine. Spoon about 1/3 cup of the chicken mixture evenly down the center of each tortilla (if necessary, soften the tortillas by heating them in the microwave). Tightly roll each tortilla and lay seam-side down in a greased 913 inch baking dish. Top with the remaining cheese. Cover dish with foil and bake for 20 minutes. Remove foil and bake another 5 minutes, or until cheese is browned and bubbly.

Apple Streusel Muffins

Serves 12 1 bag Apple Streusel Muffin Dough 1 egg cup milk 2 tablespoons oil 1 bag Apple Streusel Muffin Topping cup butter, melted Preheat oven to 350F and grease a 12 cup muffin tin. Melt cup butter and mix it with the Apple Streusel Muffin Topping. In a large bowl, mix together the Apple Streusel Muffin Dough with the egg, milk, and oil. Divide the batter into the 12 muffin cups and top with the Apple Streusel Muffin Topping. Bake for 15-20 minutes, until the tops are golden brown and they pass the toothpick test.
