POTATOES AND BORAGE BROKEN OMELET

INGREDIENTS 4 potatoes. 1 onion. 1 big borage (typical aragonese vegetable). 6 eggs. Olive oil. Salt.

PREPARATION Cut into small pieces the borages stems ant put to cook for 25-30 minutes.

Chop the onion into small pieces and fry in a pan with some olive oil.

Once well done mix with borage and cook for 4-5 minutes

Cut the potatoes into slices, salt them and fry with very hot olive oil.

Add the potatoes without the oil on the pan where we have de vegetables and saute for about 3-4 minutes.

Beat the eggs salt then and add to the pan. When the eggs are cooked the omelet is ready to eat.
