Pizza Muffins

A guilt free, yummy twist on the pizza muffin

I Ingredients
3 oz turkey breast. chopped 1/4 cup sugar 2 large eggs 1 cup low fat yogurt 3/4 cup low fat cheddar, shredded 1/2 tsp ground oregano 1 dash salt 2 tbsps vegetable oil 1/2 cup peppers, chopped 2 fl oz water 3 tsps baking powder 1/2 tsp baking soda 2 cups flour

D Directions
1. Pre-heat oven to 400 F (200 C). Line 12 muffin cups with paper liners. 2. In a large bowl sift flour, sugar, baking powder, salt, oregano and baking soda until combined. Stir in low fat cheddar. 3. In a medium bowl, whisk together yogurt, eggs, water and oil until smooth. Stir into flour mixture just until well combined. 4. Stir in sweet pepper and turkey, the batter will become quite thick. Spoon batter evenly among muffin cups. 5. Bake for about 20 minutes, until golden and a toothpick inserted into the center of the muffins comes out clean. 6. Allow muffins to cool in pan for 5-10 minutes before removing, then let cool completely on a wire rack. 7. Note: these muffins can be frozen in an airtight container for a month. If frozen allow to thaw at room temperature.

Low Carb Cheddar Cheese Biscuits


Flakey cheddar cheese biscuits that are truly scrumptious.

I Ingredients
1/2 cup sharp cheddar cheese 2 cups low carb baking mix 2 oz salted butter 1/4 cup whipped whipping cream 1 tsp garlic powder 1 tsp onion powder 1/4 cup water

D Directions
1. Pre-heat oven to 425 F (210 C). 2. Cut cold butter into low carb baking mix (like Carbquick) with pastry cutter until mixture resembles coarse meal. 3. Add shredded cheese, salt, garlic and onion powder. Blend well. 4. Mix whipping cream and water to equal 1/2 cup liquid and add to dry mix. Stir until dough forms. Do not overwork. 5. Drop dough onto greased cookie sheet (approximately 1.5 ounces raw dough). 6. Bake in hot oven approximately 8 minutes until golden.
