How long has it been around?

Cranberries have been used for consumption for many decades dating

back as far as 1550, and are 1of 3 North Americas native fruits.
Cranberries were first used by Native Americans, who discovered the

wild berry's versatility as a food, fabric dye and healing agent.


Cranberries were one of the dishes served during Thanksgiving

between the Pilgrims and Native Americans.


Contrary to popular belief, cranberries do not grow in water.

Instead, they grow on vines in impermeable beds layered with sand, peat, gravel and clay.

How does it help the body?


Cranberries are good antioxidants that are good for the body. They are also helpful in reducing urinary tract infections.
Also scientists now think this same function may be useful in blocking the

bacteria responsible for ulcers and certain oral bacteria that can lead to gum disease.

Cape Cod Cranberry Growers Association was established in 1888 and has been harvesting berries for 125 years. They promote many healthy recipes with cranberries, and export cranberries around the world. They also have fun and friendly family annual festivals for the community to educate and promote the berries. The association headquarters is located in Massachusetts.

Preparation Time: 15 Minutes Cook Time : 40 Minutes

Ingredients:
1 cup rolled oats 1/4 cup Red River hot cereal 1/4 cup cornmeal 1 cup whole wheat flour 2 tablespoons flax seeds (whole or ground) 1 1/2 teaspoons baking powder 1 teaspoon baking soda 1/3 cup applesauce 1 cup plain yogurt 1 egg 1/2 cup brown sugar 1 1/2 cups blueberries 1/2 cup dried cranberries

Directions

Step 1
Soak: oats, 12 grain cereal and cornmeal in yogurt and apple sauce for 1/2 hour. Add brown sugar, egg and mix well. Step2 Mix: flour, flax, baking powder, baking soda - Add to yoghurt mix. Combine just until moist. Batter should be fairly thick. Add a tablespoon or two more of flour if batter is runny. Step 3 Fold: fold in berries dried cranberries Step 4 Grease muffin pan or use line with muffin cups. Step 5 Makes 12 muffins (or 6 super muffins!). Step 6 Bake at 350 F for 35-40 minutes or until inserted into muffin comes out clean. toothpick
