EASY CHICKEN AND LEEK PIE (779)

4 Preparation: 10 mins, Cooking 50 mins

1 small onion, sliced 400g pack skinless chicken thighs, cut into chunks 1 tbsp vegetable oil 150ml/1/2 pint chicken stock

1 leek, cut into rounds and halved 6 tbsp crme fraiche 750g/ 1lb 10oz potatoes, cut into chunks

1. Heat grill to 150C or a medium heat. Fry onion and chicken for 2 minutes, add leek and fry for approx 10 minutes on a low heat. 2. Ppour over the stock, bring to the boil and then simmer for 20 minutes until the chicken is cooked. Add 3 tbsp of the crme fraiche. 3. Boil the potatoes until soft. Drain and mash, adding the remaining crme fraiche. 4. Spoon the chicken mix into a dish and top with the mashed potatoes. Place on a baking tray and place under then grill until the potatoes are golden.
