Escargole Greens and Beans

Ingredients

Procedure:

Cut off bottom, wash, then slice in pieces.

Parboil in a pot with boiling water.

Heat oil in a skillet over medium heat. Saute garlic. Transfer greens into the skillet. Season then add beans, cook until hot.

Serve sprinkled generously with grated Parmesan cheese.

Asparagus in Green Sauce

Ingredients:

Procedure:

Chop parsley, garlic, and anchovies. Transfer in bowl, stir in pepper and wine vinegar. Whisk in oil, adding it slowly.

Boil asparagus until cooked. Soak in cold water.

Add green sauce before serving.

Bread Salad

Ingredients:

Procedure:

Place bread in bowl, sprinkle vinegar and water mixture over bread. Set aside.

Add tomatoes, onion, cucumber, celery, basil, salt, and pepper to bread. Mix gently Sprinkle oil over. Refrigerate for at least 30mins.
