Ingredients: 1 onion chopped 2 tomatoes chopped toor dal (found at any Indian grocery store) 2 green chilies, chopped

Recipe: 1. Wash 1 cup of toor dal with warm water. 2. Finely chop the onions, ginger, and tomatoes. 3. Add the chopped tomatoes, the dal, a pinch of turmeric powder, and 2 cups of water to a rice cooker. 4. Steam cook it for 15-20 minutes (until the dal becomes tender). 5. Once the dal and tomato mixture has been cooked, blend it with a hand blender for 10-15 seconds. Keep this aside for now. 6. In a frying pan, add 1 tbsp butter or oil, 1/2 tsp mustard seeds, 2 chopped green chilies (for spice), the chopped ginger, and the chopped onions. 7. Fry for 5 minutes on medium heat. 8. Add the mashed dal into the pan. 9. Add 1 tsp of salt for taste. 10. Keep this on low heat for 10 minutes. 11. Sprinkle finely chopped cilantro on top. 12. For more taste, squeeze half a lemon and mix throughout. 13. Serve with cooked white rice, or enjoy plain! 14. Chopped cashew nuts or other nuts are optional to be added on top. Mix thoroughly.
