4 Baking, Bread

350g organic strong white flour 100g organic whole-wheat flour 1 tsp bicarbonate of soda 1 tsp salt

2 tsp muscovado sugar 25g butter 500ml buttermilk 2 tsp wheat bran, for dusting

Preheat the oven to 220C/425F/Gas Mark 7. Line a baking tray with parchment. Grease and flour 4 x 9cm metal pastry rings and place on the tray. Mix the dry ingredients together and rub in the butter to form fine crumbs. Make a well in the centre and pour in the buttermilk. Gather the mixture together to form a soft, slightly sticky dough. Divide the dough into 4 and gently knead each with floured hands until smooth. Place a piece of dough in each ring, press down lightly and cut a cross in the top. Sprinkle with a little bran and bake for 30 minutes. Reduce the heat to 150C/300F/Gas Mark 2 and cook for a further 15 minutes. Take out of the oven, remove from the pastry rings and cool on a wire rack, covered with a clean tea towel. These are best served with salted butter.
