Fish Cakes

Ingredients
4 large potatoes, peeled and halved 910 g cod fillets, cubed 30 g butter 20 g grated onion 8 g chopped fresh parsley 2 egg 90 ml oil for frying

Directions
1. Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender. 2. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl. 3. Add butter, onion, parsley, and egg to the bowl; mash the mixture together. Mold the mixture into patties. 4. Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.

Tartar Sauce
Ingredients
1 cup mayonnaise 1 tablespoon sweet pickle relish 1 tablespoon minced onion 2 tablespoons lemon juice (optional) salt and pepper to taste

Directions
In a small bowl, mix together mayonnaise, sweet pickle relish, and minced onion. Stir in lemon juice. Season to taste with salt and pepper. Refrigerate for at least 1 hour before serving.
