But this Industry relies on its roots the cows that provide the milk here are some of the many varieties. Illawarra The Illawarra breed is a popular breed as it has dark skin meaning it is resistant to sunburn it is also popular as it is easy calving and can thrive just about every were. It is a docile breed that produces on average 4521L of milk per lactation with a butterfat percentage of about 3.6% and a protein content of 3.3%. A mature bull weighs about 600-700kg and matures late and reaches puberty late. Ayrshire The Ayrshire is a widely used breed in the industry as it has a very handy trait of being able to forage really effectively in most regions meaning it can flourish in most places . The breed has a good temperament and produces about 4166L of milk with a butterfat concentration of 4% and a protein percentage of 3.3%. A mature bull weighs in the range of 1-1.2 tonnes and reaches puberty and maturity early. Guernsey The Guernsey breed is used by farmers because of it ability to produce milk that is very high in butterfat. The breed has a mild temperament and on average produce 3731L per lactation with butter fat reading of 4-5% and has a protein concentration of 3.5%. A mature bull weighs about 600700kg and reaches maturity and puberty early. Holstein-Friesian The Holstein-Friesian is one of the most popular breeds in Australia for many reasons but mainly because it produces a lot of milk each time it lactates. A mature bull weighs about 600-700kg and reaches puberty and maturity at a medium time compared to other cows.
