2 egg whites, lightly beaten 2 tablespoons mayonnaise 2 teaspoons chopped fresh parsley 1 1/4 teaspoons Old Bay or Creole/Cajun seasoning 1 teaspoon Worcestershire sauce 1/4 teaspoon ground black pepper 1 teaspoon dry mustard 1/2 cup soft bread crumbs 1 pound fresh lump crabmeat, drained
Preparation: Combine egg whites, mayonnaise, parsley, Creole seasoning, Worcestershire sauce, pepper, and dry mustard. Gently stir in the bread crumbs and crabmeat. Shape mixture into 8 patties, about 2 1/2 inches in diameter. Place patties on a baking sheet lined with waxed paper or non-stick foil; cover and chill for 30 to 60 minutes. Spray a large nonstick skillet with vegetable cooking spray or use a little olive oil to coat the bottom. Place over medium-high heat. When the skillet is hot, add crab cakes; cook for 3 to 4 minutes on each side, or until browned. Makes 4 servings. Baked ziti
Baked ziti with ground beef, green pepper, onion, tomatoes, basil, oregano, garlic powder, mozzarella cheese, and cooked ziti or macaroni. Ingredients:
1 pound lean ground beef (ground chuck or ground round) 1/2 cup chopped onion 1 green bell pepper, chopped, about 1/2 cup 1 can (14.5 ounces) diced tomatoes, undrained 1 can (8 ounces) tomato sauce 1/2 teaspoon dried leaf basil, crumbled 1/2 teaspoon dried leaf oregano, crumbled 1/2 teaspoon garlic powder or small clove garlic, minced 1 1/2 teaspoons salt 1/4 teaspoon pepper 8 ounces ziti or elbow macaroni, cooked and drained 2 cups (8 ounces) shredded mozzarella cheese, divided
Preparation: Saut ground beef, onion, and green bell pepper in a large skillet until onion is tender and beef is lightly browned. Drain off excess fat; add tomatoes, tomato sauce, basil, oregano, garlic powder, salt, and pepper. Stir well; stir in ziti or elbow macaroni and 1 cup of the cheese; transfer to a 2 1/2-quart casserole. Top with the remaining cup of cheese. Bake at 350 for 25 to 30 minutes, or until hot and bubbly. This baked ziti recipe serves 6.
