Chocolate fridge cake Makes: 16 portions Preparation Time: 5 minutes (plus 3 hours chilling time) Cooking Time: 10 minutes

You will need 150ml double cream 400g dark chocolate, roughly chopped 100g salted butter, cut into cubes 150g amaretti morbidi (the soft amaretti), roughly chopped 100g pistachio nuts, roughly chopped 125g ready-to-eat prunes Cocoa powder to dust Method 1. Oil and line a 20cm square tin or a round springform tin. 2. Put the cream, chocolate and butter in a bowl set over a pan of simmering water. Avoid the bowl touching the water. When almost melted, after around seven minutes, remove from the heat, leave a few minutes and stir until smooth. 3. Put the amaretti, nuts and prunes in a bowl and pour over the chocolate mixture. Turn gently to mix, then put into the prepared tin and cover with cling film. Chill in the fridge for around three hours, then dust thickly with cocoa powder, before cutting into slices.
