ABSTRACT
A strain of indigenous microorganism produced a glucocyl transfer enzyme (cyclodextrin glucanotransferase, CGTase EC. 2.4.1.19) that
catalyzes a reversible conversion of polysaccarides and polyphenolic compounds yielding polyphenol glucosides. Polyphenols, such as
hydroquinone, pyrocathecol, resorcinol and catechin, are considered to have strong biological activities such as antioxidant. The
transfer product (pyrocathecol glycoside) that was synthesized in the present of pyrocathecol-aglycone was determined using TLC. An
Inhibitory effects of the pyrocathecol glycoside against bleaching of β-carotene by oxidation of linoleic acid was also examined. We
observed that the polyphenol glycoside was suggested to possess antioxidative activity from the point of retaining the bleaching value of
β-carotene at concentration 1mM, 2 mM and 4 mM. The result showed that pyrocathecol glycoside (1.40) was found to be even higher
than of arbutin as authentic glycoside (0.96) and aglycone (pyrocathecol, 1.16), however, it was lower than of BHT (butylated hydroxy
toluene, a commercial antioxidant product, 1.59). This result suggested that polyphenol glycoside possessed considerable antioxidative
activity by trapping radicals, and this effect seem to be available for practical use.
