French bread pizza

Ingredients: 50g salami, sliced, rinded and chopped 1 large ripe tomato, skinned and chopped 3 black olives, stoned and sliced 50g mozzarella cheese, grated Pepper small French loaf 50g butter or margarine 1 tbsp snipped fresh chives or 1 tbsp dried mixed herbs

Methods:

In a bowl, combine the salami, tomato, olives and half of the cheese. Season with pepper. Trim the end off the French bread and split in half lengthwise. Toast both pieces on each side. Spread generously with the butter and scatter the chives on top. Spoon on the salami mixture, then top the rest of the grated cheese. Cook under a hot grill for 2 minutes or until the cheese melts. Serve immediately.
