Fennel Cookies

Gluten and Lactose free Makes: 100 cookies

Ingredients
3 tbsp Solid coconut oil 7 tbsp White sugar 2 medium Eggs 1 cups Rice flour (plus 2 tbs) 1 tsp Baking soda 1 pinch of Salt 1 tbsp Fennel

Prepare
Beat with a wooden spoon in a medium bowl the solid coconut oil and the sugar until it gets creamy. Add one egg at a time and you might need to add one teaspoon of the rice flour to keep it creamy. Beat in the baking soda and salt. Slowly add the rice flour, until its necessary to put your hands on the dought. When the rice flour is over and the batter stars to form a ball its time to add the fennel and knead a little more. Preheat the oven to 180C. Chill the batter for 10 minutes on the refrigerator. Put a little flour on a clean benche and stretch the dough with a rolling pin. Cut in desired format and pour into a greased pan. Bake for 10-15 minutes, until golden brown. Tip : Dont use too much flour to stretch the dough because it tends to dry out and break easily.
