By lowering the glycemic index of a meal by 30 points, the insulin response becomes lower storing fewer calories as fat. Vinegar acts as an antihypertensive, which in return reduces high blood pressure. Lastly, it prevents the body from becoming excessively alkaline keeping a high balance pH.
