Tomato Sauce from Katie Kazoo, Switcheroo

Ingredients: 1 Carrot, diced 1 medium onion, chopped 1 stalk of celery w/ the leaves still on, chopped 2 TB olive oil 1 clove of garlic, minced 5 basil leaves, torn 2-3 ripe med. Tomatoes, skinned, drained, and chopped salt and pepper

1. Saute the carrot, onion, celery, and garlic in a saucepan w/olive oil for about 5 minutes over med. Heat 2. Add the basil leaves and then the tomatoes. Stir. 3. add salt and pepper to taste 4. Simmer the sauce on low heat for about half an hour until the sauce thickens 5. serve over your favorite pasta.
