QUINOA

ITS A SUPERFOOD

First domesticated by the Andean peoples over 3,00 years ago Used by the Incas as a sacred crop It is now popular in countries such as Japan China Europe

The United Nations General Assembly declared 2013 the International Year of Quinoa in hopes to bring to light the role that quinoa can play in providing not only nutrition but food security and poverty eradication with an overall objective of achieving at least one if not some of the Millennium Development Goals.

Salad Ingredients:

2 T fresh-squeezed lime juice 1 tsp. Spike Seasoning (optional but highly recommended)

cup quinoa (rinsed if needed, check the package) 1/2 cup water tsp. salt

1/2 tsp. ground Ancho chile pepper (or use regular chile powder if you don't have Ancho) fresh ground black pepper to taste 1/4 cup extra-virgin olive oil
