POPULAR BULGARIAN FOOD SPECIALTIES

Banitsa
Ingredients
2 packets of phyllo dough
(Bulgarian "fini kori" or phyllo
from the frozen desserts section)
200 grams of yellow cheese
(Bulgarian kashkaval or a mixture
of cheddar and mozzarella)
500 grams of white cheese
(Bulgarian sirene or feta cheese)
7 eggs
100 grams of butter
1/2 cup of soda water
1 cup yoghurt
Procedure
1. Mix six of the eggs, the grated butter, the crumbled white cheese,
the yellow cheese cut in small pieces, and the yoghurt.
2. In a buttered pan, lay a layer of the phyllo dough, spread a layer of
the mixture, and continue alternating layers so that the phyllo and
the mixture are finished about the same time.
3. Finish with a layer of phyllo dough.
4. Cut the banitsa into serving pieces.
5. Mix the last egg with the soda water and stir.
6. Pour the mixture over the banitsa and make sure there are no pieces
of the phyllo dough left dry.
7. Bake in a preheated over at 200 C (390 F) for 40 minutes, or
until golden. Enjoy!

Tarator Soup
Ingredients

500 g yoghurt

1 cup (240ml) water

1 or 2 diced cucumbers
(diced is far better than grated,
although at many restaurants
they grate them)

a couple of spoonfuls
chopped dill

salt, vinegar and oil to taste

optional: a couple of spoonfuls chopped walnuts


Procedure
Mix all the ingredients and serve cold in a soup dish. Use enough water
so the soup is about the consistency of milk. Add a couple ice cubes if it's
not cold.
If you use all of the above ingredients without the water and strain the
yogurt until it becomes half in volume, you can make a salad. It is
referred to as "Snezhanka" (Snow White) or mlechna salata (yogurt
salad). The main difference is that use gherkins for Snezhanka and fresh
cucumbers for Mlechna Salata.

Shopska salad
Ingredients
1 onion
500 gr tomatoes
150-200 gr ripened cow or
sheep cheese in slices
1/2 dl oil
1 small hot pepper
1 cucumber, salt
Procedure
Peel onion and chop finely. Wash tomatoes, peel, cut into round slices,
mix onion and tomatoes, pour over with oil, salt and add peeled cucumber
cut into cubes. Mix all slowly, sprinkle with grates or crumbled cheese
with small pepper cut into rounds.

This delicious salad is a frequent accompaniment to maize flour dishes


(cornbread, green vegetables pie), to baked or cooked potatoes. French
toast, tchevapchitchi (grilled cork-shaped ground meat) and the like.
