makes approx. 2.25 kg (4 1/2 lb) 1 kg (2 lb) stoned dates 725 ml (1 1/4 pt) water 1 kg (2 lb) preserving sugar 5 g (1 tsp) ground cinnamon 5 g (1 tsp) ground nutmeg grated peel and juice of 1 lemon 30 g (2 tbsp) unsalted butter

method
1. Bring the dates and water to the boil. Simmer gently for 10 minutes. 2. Add the remaining ingredients and continue to cook, stirring all the time. 3. When the mixture is thick and smooth, take it off the heat. 4. Pack into sterilized, warmed jars and cover.

Directions: 1. Boil water in pan.

2. Add the sugar and the cloves. Stir continuously until the water comes to a boil a second time. 3. Add the dates and turn the heat to low. 4. Stir continuously until the dates form a paste (usually takes 10 minutes). 5. Add the nuts and lemon juice and cook for 4 minutes on low heat. 6. Remove from heat and let cool. 7. Store in glass jars and refrigerate. (Note: if you plan to preserve the jam, follow proper canning procedures.)
