Fries Chicken with Spicy Fragrant Dressing

Ingredients : 2 chicken thighs, 2 stalks coriander stems (chopped), some chilli padi, tbsp. minced garlic Seasoning : 4 tbsp white vinegar, 2 tbspdark soy sauce, 3 tbsp sugar, dash of sesame oil Marinade : 2 tbsp rice wine, 2 tbsp ginger juice, 1 tsp salt, 1 tsp pepper

Method : 1> Mix will chicken thighs with marinade. Set aside for about 1 hour. 2> Heat some oil for deep-frying to about 140C, drain chicken well and deep-fry over low heat until cooked through (about 5 minutes). Remove. 3> Switch to high heat and return chicken to the pan to fry for another 20 seconds. Remove and drain well. Cut into long strips. 4> Mix well seasoning and add coriander stem, chilli padi and ginger. Drizzle over fried chicken to serve.
