Crisp Fried Fish

Ingredients : 1 fish (about 500g), 1 egg, 2 tbsp potato starch Mariande : 2 stalk spring onion, 10g shallots, lemon, 10g ginger, 1 tsp pepper, 1tsp salt, tsp sugar Method : 1. Rinse fish and drain dry. Crush spring onion, shallot and ginger. Extract juice form the lemon. 2. Combine will fish with marinade. Set aside for 1 hour. 3. Dip fish in beaten egg and coat wvenly with potato starch. 4. Heat some oil for deep-frying to about 160C, turn down the heat and put in fish, then deep-fry over medium heat until the fish floats to the surface. Remove. 5. Switch to high heat and return fish to the pan to fry for another 15 seconds until crispy. Remove and drain well.
