Deep Fried Eggplant

Ingredients : 300g eggplant, 3 cup oil for deep-frying Ingredients A : Minced chilli pepper as desired, 1 tsp soy sauce, 1 tsp sugar, 1 tsp each (minced) garlic cloves and ginger root. Method : 1. Chop eggplant in pieces, Blend ingredient A thoroughly. 2. Heat oil to high and deep-fry eggplant for 2 minutes until tender, remove. Mix with ingredients A and serve.
