1. Phng php xc nh nhit h ha:


Xc nh nhit h ho qua phn hu kim

Nhit h ha cui cng ca tinh bt go c phn chia: - Thp: <70oC - Trung bnh: 70-74oC - Cao: >74oC

1.2 Ni dung phng php: Nguyn tc: Dng dung dch KOH 1,7% phn hu 6 ht go xt nguyn nhit 30oCtrong 23 gi. Da vo hnh dng v mc b phn hu ca cc ht go sau khi m xc nh phn hu kim bng cch so snh mu go th nghim vi mu chun v thang im chun, t qui ra nhit h ho ca mu.

nh gi thang im: - im 1: Ht go khng b phn hy. - im 2: Ht go b trng ln. - im 3: Ht go b trng ln, vnh keo khng hon thin v hp. - im 4: Ht go b trng ln vnh keo hon chnh v rng. - im 5: Ht go b nt ra hoc v thnh nhng mu nh, vnh keo hon chnh v rng. - im 6: Ht go b phn tn, ha tan vi vnh keo. - im 7: Ht go b phn tn v trn ln hon ton.

2. Xc nh hm lng tinh bt:


Xc nh hm lng tinh bt theo phng php thu phn bng acid Nguyn tc: Tinh bt s b thu phn to thnh ng Glucoza di tc dng ca acid. Xc nh hm lng Glucoza to thnh ri nhn vi h s 0.9 ta c hm lng tinh bt.

Dng c v ha cht:
- Cn phn tch
Phu lc v giy lc Phu lc G-4 Buret 25ml Pippet bu 20ml

- Bnh nh mc 250ml
Bnh tam gic 100 v 250ml My bunzen ng ong 50ml Dd Feling A v B

Dd Fe2(SO4)3 Dd Na2SO4 bo ho Dung dch NaOH 20% Dung dch Iod.

- Dd ch axetat 10% - DdHCl m c - Dung dch KMnO4 0,1 N

Cch tin hnh:


- Cn 2g mu th nghim, nghin nh, cho vo bnh tam gic 250ml - Thm 50ml nc ct m, lc u, yn 30 pht - Lc, thu ra lng tinh bt bng nc ct 2-3 ln. - Chuyn ton b vo bnh tam gic 100ml, ht 6ml HCl m c ri cho vo bnh

Tnh kt qu: Hm lng tinh bt c tnh bng % theo cng thc:
