South Indian Special Breakfast

Ingredients
2 tbsp Cumin Seeds 1/2 Cup Urad Dal (White lentils) as desired Vegetable or Olive Oil 1 Cup Rice 1 cup Cilantro finely chopped (Optional) 4 Green Chilies finely chopped Taste Salt 1 Onion Finely Chopped

Directions
Pre-Preparation:
Wash rice and urad dal separately Soak rice and urad dal in water separately and leave it overnight Drain the water and add them to a blender, add salt as per taste and grind to a smooth paste, while adding water Set this batter paste to ferment at room temperature for 6 to 12 hours

Directions:
Add finely chopped onions, green chillies, cumin seeds and the cilantro to a bowl and mix thoroughly Heat a non stick pan, and add a little oil or ghee Add 3 tbsp or half a cup of batter to the pan and spread evenly in a 1/4 inch thick circle Garnish/sprinkle the surface with the chopped onions, chillies, cumin seeds and cilantro Sprinkle oil/ghee at the corners and on top of the surface Cook on low heat for about 5-8 mins Turn over and cook for another 8 mins on low heat until it is golden brown

Serve with pickle, chutney or sambar.
