II. TNG QUAN V NGUYN LIU
1. C thu Nht
1.1 c im
Tn khoa hc l Scomberomorus niphonius (Cuvier, 1831; Jordan, Tanaka & Snyder,
1913). Cc tn gi khc nh Cybium gracile (Gunther, 1873), Sawara niphonia (Jordan &
Hubbs, 1925). Tn gi theo FAO l : Japanese Spainish mackerel. C c chiu di ti a l
100cm v cn nng ti a ghi nhn c l 4.5 kg. C thu Nht c nhiu vng bin cc
nc ng nh Nht Bn, Hn Quc, Trung Quc C thu Nht sng tng trn mt nc
bin (su khong 20m tnh t mt nc bin), sng ven b bin. Chng di chuyn
trng vo ma xun v gim s lng vo khong thng 9 n thng 11 qun o Nht
Bn. Thi gian sinh sn ko di t thng 4 ti thng 5 vi s lng trng c trung bnh t
550 000 n 870 nghn trng (Kishinouye, 1923). Thc n ca chng l nhng loi c nh
hn.

2.1 Thnh phn dinh dng ca c thu
Thnh phn c bn: protein, lipid , glucid, nc, khong , cht ngm ra, sc t ng thi
c cha h thng enzyme, vi sinh vt v cc cht hot ng sinh hc khc.

Thnh phn chnh ca c thu l nc chim khong 73,7% trng lng c ti.
L dung mi cho nhiu cht trong c th l mi trng din ra cc phn ng ha hc ca
qu trnh trao i cht, l phng tin vn chuyn cc cht ha tan trong t bo v trong
c th.
Protein
Protein ca c l protein hon thin.Trong khu phn thc n protein cung cp khong
14% tng s calo trong trn 60% do protein ng vt cung cp.
Protein ca c thu chim khong 20,3% trong tng cc thnh phn ha hc ca c. c
cu to t cc acid amin, cc acid amin khng thay th quyt nh gi tr dinh dng ca
thc phm.
C th chia protein ca m c c ra thnh 3 nhm:
Protein cu trc (Protein t c):
Gm cc si myosin, actin, actomyosin v tropomyosin, chim khong 65 - 75% tng
hm lng protein trong c. Cc protein cu trc ny c chc nng co rt m nhn cc hot
ng ca c. Myosin v actin l cc protein tham gia trc tip vo qu trnh co dui c.
Protein cu trc c kh nng ha tan trong dung dch mui trung tnh c nng ion kh cao
(>0,5M).
Protein cht c (Protein tng c):
Gm myoglobin, myoalbumin, globulin v cc enzym, chim khong 25-30% hm
lng protein trong. Cc protein ny ha tan trong nc, trong dung dch mui trung tnh c
nng ion thp (<0,15M). Hu ht protein cht c b ng t khi un nng trong nc
nhit trn 50oC.
Protein tng c c kh nng ha tan cao trong nc, l nguyn nhn lm mt gi tr
dinh dng do mt lng protein ng k thot ra khi ra, p mui,V vy cn ch
duy tr gi tr dinh dng v mi v ca sn phm.
Trong qu trnh ch bin v bo qun, myoglobin d b oxy ha thnh metmyoglobin,
nh hng n mu sc ca sn phm.
Protein m lin kt:

Bao gm cc si collagen, elastin chim khong 3% trong c, c trong mng li ngoi


bo, khng tan trong nc, dung dch kim hoc dung dch mui c nng ion cao. Vic

Cht ngm ra
Cht ngm ra ca c tht c thu khong 14-18% lng m ton phn. Thnh phn chnh
ca hp cht ny bao gm cc cht bay hi (amoniac, amine, trimethylamin, dimethylamin),
trimethylamineoxid (TMAO), dimethylamineoxid (DMAO), creatin, cc acid amin t do,
nucleotide, ur (c nhiu trong c sn) ..
Cc cht ngm ra ng v mt dinh dng m ni th tm quan trng khng ln lm
nhng chng nh hng n mi tnh cht ca thc phm nh: mu sc, mi v, trng thi
cu trc, dinh dng, s an ton v s h hng sau thu hoch.
Cht ngm ra d b vi sinh vt tc dng gy thi ra lm gim kh nng bo qun
nguyn liu. Cht ngm ra l nhng cht hu c c m gm dn xut ca cc loi guanidin,
hp cht thiazol, axitamin t do.. v cht hu c khng m nh cholesterol, glucogen, axit
succinic v cc cht v c nh Mg, Na, Ca dng clorua ho.
Cht bo:
C thu l loi c c lng cht bo chim khong 2.5%.
Cht bo ca c thu thng tp trung trong m bng v y l v tr c t c ng nht
khi bi li trong nc. M m cn tp trung m lin kt, nm gia cc si c.
Cht bo ca c rt c bit, chng cha cc cht bo cha bo ha l cht rt c li
cho hot ng mng t bo ca con ngi; gip lm gim nng m xu trong mu v c
kh nng gi li m mu tt
C thu c hm lng acid bo cha bo ha cao gp ba ln hm lng acid bo bo ha.
Cc acid bo tp trung ch yu phn da, phn c tht mu sng, phn u, bng, gan V
vy tht c thu rt d h hng, nhanh b phn hy, nht l trong mi trng nhit i nng
m.
Enzym
Enzym l protein, chng hot ng xc tc cho cc phn ng ho hc trong ni tng
v trong c tht.

Trong c c nhiu enzym khc nhau. Nhm enzym chnh nh hng n cht lng c
l enzym thu phn.
Nhiu loi protease c tch chit t c tht c v c tc dng phn gii lm mm m
c. S mm ho ca m c gy kh khn cho ch bin. Cc enzym thu phn protein quan
trng trong nguyn liu gm: cathepsin, protease kim tnh, collagenase, pepsin, trypsin,
chimotrypsin.
Cc emzym thu phn lipid quan trng trong c gm c: lipase, phospholipase. Chng
thng c trong cc c quan ni tng v trong c tht. Enzym thu phn lipid rt quan trng
i vi c ng lnh, cc loi c ny lipid c th b thu phn khi hot ng ca nc
thp. Trong qu trnh bo qun lnh ng cc axit bo t do c sinh ra t photpholipid v
triglyxerit, c nh hng xu n cht lng ca c. Axit bo t do gy ra mi v xu, nh
hng n cu trc v kh nng gi nc ca protein c tht.
Gluxit
Hm lng gluxit trong c tht c rt thp (di 0,5%), tn ti di dng nng lng d
tr glycogen. Sau khi cht, glycogen c tht chuyn thnh axit lactic, lm gim pH ca c
tht, mt kh nng gi nc ca c tht. S bin i ca pH c tht sau khi c cht c
ngha cng ngh rt ln.
Cc loi vitamin v cht khong
Cung cp ch yu vitamin nhm B (thiamin, riboflavin v B12), vitanin A v D.
Vitamin A v D tch ly ch yu trong gan, vitamin nhm B c ch yu trong c tht c.
Vitamin rt nhy cm vi oxy, nh sng, nhit . Do , trong sn xut hp c nh
hng ln n thnh phn vitamin. V vy, cn phi ch trnh tn tht vitamin trong
qu trnh ch bin.
Cht khong ca c thu phn b ch yu trong m xng, c bit trong xng sng.
2. Tht heo (tht ln)
Tht heo hay tht ln l phn phn c ca con ln. y l thc phm thit yu s dng
hng ngy ca con ngi. Tht heo c chia thnh nhiu phn vi cc tn gi khc nhau
nh tht thn, tht th, nc vai, gi, ba ch (ba ri)

tng nng lng ca tht, lm cho tht va c gi tr nng lng cao va gp phn tng
hng v thm ngon ca tht. cc cht trch ly trong tht kch thch s ngon ming v s tit
dch tiu ha.
III. C S KHOA HC
1. Qu trnh p mui
1.1 Mc ch ca qu trnh p mui tht, c
To v cho sn phm.
Tng thi gian bo qun cho sn phm.
Mui n l cht st khun nh, nng 4.4% c th lm ngng s pht trin ca mt
s vi sinh vt gy bnh. [1]
Mui n km hm s t phn do tc dng ca enzym v vi khun. Nng mui cao gy
nn p sut thm thu ln c th lm v mng t bo vi khun, lm nc thot ra ngoi v
th vi khun kh pht trin. Nng mui thng thng s dng ln hn 10%. Tuy nhin
c mt s vi khun chu mui pht trin c trong mi trng nng mui cao (28%).
nng mui 20 25% qu trnh phn gii tht, c din ra rt chm.[2]
Mui NaCl c cha ion Cl- c tc dng gy c i vi vi khun. S thi ra ca c ch
yu l do tc dng phn gii ca enzym v vi khun. Cc loi enzym v vi khun ny cho
hot tnh mnh nht trong mi trng nc mui long hoc khng mui nhng nng
mui cao chng s b km hm[2]. Mui cn lm gim lng oxy ha tan trong mi trng
lm c ch cc vi sinh vt hiu kh.[1]
2.1 Cc phng php p mui:

3.1 Nhng bin i ca nguyn liu tht, c khi p mui
S thm thu mui vo nguyn liu. qu trnh ny c th chia lm 3 giai on:[1]
Giai on 1: khi nng mui cao, s chnh lch nng mui trong v ngoi nguyn
liu ln, mui ngm vo nhanh ng thi nc trong nguyn liu thot ra ngoi. Trong giai
on ny tht, c t thm, mu cn , cha ng c.
Giai on 2: mui thm thu vo trong nguyn liu lm cho s chnh lch nng
gim, khi nc thot ra ngoi chm hn, protein b bin tnh, tht tr nn rn chc, mu
tr nn sm v ng c li.
Giai on 3: p sut thm thu gim dn ti 0. Nng mui bn trong nguyn liu dn
cn bng vi bn ngoi , nguyn liu giai on ny tr nn rn chc, c mi thm c
trng.
Nc v cht dinh dng trong nguyn liu thot ra ngoi.
4.1 Cc yu t nh hng n tc ngm mui khi p tht c
Phng php p: p mui t nhanh hn phng php p mui kh v phng
php hn hp.
Nng : nng mui cao th tc thm thu nhanh.
Thi gian: tc thm thu mui vo nguyn liu tng ln theo thi gian, n ngng s
gim xung v t cn bng.
Thnh phn ha hc ca mui: tc thm thu mui gim khi mui c ln cc thnh
phn nh cation Ca, cation Mg. ng thi cc thnh phn ny cng c th lm cho sn phm
c v ng.
Nhit : nhit tng th tc thm thu tng .
Cht lng nguyn liu: nguyn liu ti th tc thm thu nhanh, nguyn liu mng,
nh th tc thm thu nhanh hn nguyn liu to dy. Hm lng bo cng cao th tc
thm thu mui cng km.
5.1 Qu trnh p mui gy nh hng ti nguyn liu tht c

Hao ht trng lng: do s chnh lch p sut dn n hin tng mt nc trong


nguyn liu, lm gim trng lng ca tht, c. mn cng ln, tht cng ti th hao ht
cng nhiu.
Hao ht dinh dng: cc cht dinh dng trong tht nh protein tan, acid amin t do,
cht khong, vitamintheo nc ra ngoi v chuyn vo dung dch mui. mc hao ht
ti a c th ln n 10 12%.
Bin i sinh ha: cc qu trnh sinh ha trong nguyn liu din ra chm hn. Hm lng
acid amin t do gim, hm lng acid bo tng, cc cht thm tng.
2. Qu trnh hun khi
2.1 Mc ch ca hun khi
Pht trin mi cho sn phm.
Tiu dit vi sinh vt trn b mt tht, m sn phm gim lm c ch hot ng ca
vi sinh vt, ko di thi gian bo qun.
To ra sn phm mi.
2.2 Thnh phn v tnh cht ca khi
C khong 300 hp cht khc nhau trong thnh phn ca khi. Di y l nhng thnh
phn chnh.
Cc hp cht phenol: c khong 20 hp cht phenol khc nhau trong thnh phn ca
khi. Cc hp cht phenol c tc dng chng li qu trnh oxy ha, to mu, mi cho sn
phm v tiu dit cc vi sinh vt xm nhim vo thc phm.
Cc hp cht alcohol: to mi cho sn phm, gp phn nh trong vic tiu dit vi sinh
vt.
Cc acid hu c: trong thnh phn ca khi, cc acid hu c mch thng chim nhiu
nht. cc acid hu c lm gim pH trn b mt sn phm, khng c vai tr trong vic to
mu mi cho sn phm, c tc dng bo qun mt phn, lm ng t protein b mt sn
phm, to lp v o ngoi ca sn phm.
Cc hp cht hidrocacbon: ch yu l cc hp cht hidrocacbon a vng. Chng khng
ng vai tr quan trng trong vic bo qun thc phm, mt s hp cht a vng cn c th
gy ung th cho ngi s dng sn phm.
2.3 Cc yu t nh hng n qu trnh hun khi

S dng cc nguyn liu to khi nh g, mn ca, v bo ca cc loi g c hng
thm
Khng s dng cc loi g c du v d gy c cho sn phm. Khng dng g c nha
v trong khi ca g ny c nhiu b hng lm sn phm c mu nha sm v v ng.
m nhin liu khong 30%.
Nhit l t khong 300 350oC cho khi tt nht.
Thi gian hun khi ngn cha to mu c trng v v ngon cho sn phm. cn
c thi gian ph hp to sn phm c mu sc v mi v ngon nht.
2.4 Cc giai on hun khi
Giai on 1: sy
Sy nhit t 35 55oC trong 20 pht. Sy lm kh s b b mt sn phm.
Giai on 2: hun khi
Nhit tng ln 60 70oC. Giai on ny khi lng ng v thm thu vo sn phm.
Giai on 3: lm chn
Gi nhit 80 90oC. L bc cui cng hon thin sn phm.

4. Thuyt minh quy trnh cng ngh
4.1 Chn nguyn liu
C thu Nht c mua ti ch G Vp, TP HCM. Chn c cn ti, mt sng, mang ,
da trn, t nht, n tay xung thn c thy thn n hi.
Tht ba ri mua ti ch G Vp, TP HCM thuc chui ca hng Vissan. Chn tht ba ri
nhiu nc, t m, giai on trc t cng, mu tht sng, c tht mm, n hi.
4.2 X l nguyn liu
C b mang, rut, kha ngang bng, ra sch.
Tht ra sch, ct bt phn tht tha.
4.3 p mui
Nguyn liu c
Tin hnh p mui kh cho c vi cc t l mui so vi c 3%, 6%. i vi c p
mui 3%, tin hnh p mui trong 30 pht, 60 pht, 90 pht. i vi c 6%, tin hnh p

mui trong 30 pht, 60 pht. Cc gia v khc (ng, bt ngt, tiu) trn v p chung vi
mui.
Sau thi gian p, c c ra vi nc mui 3%.
Nguyn liu tht
Tin hnh p mui t cho tht theo t l 2 nc : 1 tht. ha tan mui vo nc theo
cc t l 12%, 15% mui so vi lng nc mui p. Cc gia v khc (ng, bt ngt,
tiu) ha chung vi dch nc mui. Cho tht vo nc mui, p trong thi gian 30 pht,
60 pht, 90 pht.
4.4 Hun khi
Sy: ci nhit 55oC sy nguyn liu trong thi gian 20 pht. 10 pht o chiu
nguyn liu
Hun khi: nng nhit ln 80oC bt u hun khi trong thi gian 30 pht.
Lm chin: nhit 90oC, x ht khi ra ngoi, thi gian lm chin 1 gi.

hn lng nc trong c 30 pht. Trong qu trnh hun khi, c p 30 pht s thot
m nhiu hn.

ta khng ly ra lin m bn trong thit b 15 pht sau mi ly ra. Trong qu trnh thit
b cn nng, nhit cn cao s lm m b mt tht mt i, to b mt kh cng cho sn
phm.

Nhit khi hun khng ln lm ko di thi gian hun khi, t lm gim cht
lng cng nh tnh cht cm quan ca tht ba ri v c hun khi.
Qu trnh kho st ch mang tnh tng i do s khng ng u v khi lng cng
