Pumpkin Soup

Ingredients
750 g Jap pumpkin, diced 250 g potatoes, diced 2 medium onions, diced 3 chicken stock cubes, crumbled 3 cups water 250 mL thickened cream Salt Pepper
Method
1. 2. 3. 4. 5. 6. Place all ingredients, except cream, in a large saucepan. Simmer until vegetables are tender. Remove from heat. Blend with a stick blender until smooth. Add cream and stir through (do not boil after adding cream). Season to taste.
Recipe notes
I have only used Jap pumpkin as it has the nicest flavour. I add salt prior to stick blending. We love a lot of pepper in this soup as it really compliments the pumpkin flavour in this recipe. Serve with crusty bread.
