Ingredients 1 ltr full fat milk 1 1/2 cups (300 grams) sugar 1/4 cup (20 grams) cornflour 1 1/2 cups (300 grams) cream For the paan flavouring 4 calcutta beetel leaves (paan) 1 tbsp lemon juice 6 dry dates (kharek), soaked overnight 1 tbsp fennel seeds (saunf) powder 1/4 tsp cardamom (elaichi), crushed 1/4 cup gulkand a pinch of menthol Method

For the paan flavouring Wash the paan leaves and grind them into a fine paste along with the lemon juice in a food processor. Sieve through a strainer and keep the juice aside. Deseed and finely chop the kharek. Mix together the paan juice, kharek, saunf, cardamom and gulkand in a bowl. Keep aside. How to proceed Dissolve the cornflour in 1/4 cup of cold milk. Keep aside. Place the rest of the milk in a heavy bottomed pan and bring it to a boil. Add the sugar and simmer for 5 minutes. Add the dissolved cornflour and simmer for another 5 minutes while stirring continuously, till it is of a coating consistency. Remove from the fire and allow it to cool completely. Add the paan flavouring mixture and cream to the milk. Mix well and pour into a shallow freezer proof dish. Freeze till slushy. Remove and beat with a whisk until smooth and creamy. Add the menthol and mix well. Freeze again until firm for about 4 to 6 hours.

Tips Lucknowi saunf is smaller in size as compared to fennel seeds and more fragrant. It is available at most grocery stores and paan vendors.

Ingredients 1 ltr full fat milk 1/3 cup sugar 1/4 tsp cardamom (elaichi) powder a few saffron (kesar) strands 1 tbsp arrowroot or cornflour Method In a small bowl, soak the saffron in a little warm milk and keep aside. Dissolve the arrowroot in 2 tablepsoons of water and keep aside. Put the milk in a broad non-stick pan and bring it to a boil. Add the arrowroot solution and sugar and mix well. Simmer over a medium flame, stirring continuously till the milk reduces to a little less than half the original quantity (approx. 450 ml.). Cool completely and add the cardamom powder and saffron mixture and mix well. Pour into kulfi moulds and freeze overnight till it sets. To unmould, allow the moulds to remain outside the refrigerator for 5 minutes and then unmould by inserting a wooden skewer stick or a fork, in the centre of the kulfi and puling it out.

Tips VARIATION : GULAB JAMUN KULFI Add 4 meva batis to the kulfi at step 6. Pour into jelly moulds and freeze overnight till it sets. Unmould and slice to serve.

Ingredients 2 ltrs milk 1 tbsp (levelled) cornflour 6 to 8 tbsp sugar 10 almonds (badam), blanched and chopped 15 blanched and chopped pistachios 2 pinches of saffron (kesar) strands 1/2 tsp cardamom (elaichi) powder Method Mix the milk, cornflour and sugar very well so that no lumps remain. Put the mixture in a broad vessel and boil until it is reduced to 1/3 in volume. Cool. Warm the saffron in a small vessel, add 2 teaspoons of milk and rub until the saffron dissolves. Add the saffron liquid, chopped nuts and cardamom powder and mix very well. Pour the mixture into small kulfi moulds and screw the lids tightly. Place in the freezer. 75 gms cornflour Method Soak the falooda seeds in 4 teacups of water and leave for at least 2 hours. Mix the cornflour very well in 450 ml. ( 15 fl. oz.) of water. Put to boil on a slow flame.
