Almond Cranberry Butter Cake

Ingredients: 3 eggs 135 gm. sugar 65 gm. butter - melted 100 gm. Self-raising flour 100 gm. Ground almonds 100 gm. dried cranberries - soaked in 50 ml. of boiling water - chopped Method: (1) Whisk eggs and sugar till sugar has dissolved. (2) Add in flour and ground almonds mixture alternately with melted butter. (3) Fold in cranberries. (4) Pour into 2 loaf tins (7" x 4"). (5) Bake in preheated oven at 175C for about 45 mins. or until cooked. (6) Remove and cool on wire rack for about 5 to 10 mins. before removing from the tin. (7) Slice and serve.

Apple cake

Ingredients: 130 gm. Butter 180 gm. light brown sugar 190 gm. cake flour 1 tsp. baking powder 1 tsp. ground cinnamon 1/4 tsp. ground cloves

(10) For frosting: cream butter and cream cheese until smooth. (12) Spread frosting on top of apple cake and cut into squares and serve. Add in vanilla essence. (11) Pour in icing sugar and let it beat till smooth. Mix well. salt and all the spices into a mixing bowl. . ground cinnamon 1 cup icing sugar Method: (1) Prepare a 9" square baking pan. ground ginger 1/4 tsp.1/2 tsp. maple syrup 1/8 tsp. bicarbonate of soda 1/4 tsp. cream cheese 50 gm. ground cinnamon and maple syrup. (3) Cream butter and brown sugar till creamy. Set aside. baking powder. (8) Remove cake from oven and let it sit in the tin for 5 to 10 mins before removing it. Grease and dust with flour or lined with greaseproof paper.shred then chop 1/2 cup of chopped walnuts Cream cheese frosting: 180 gm. of green apples . (2) Sift flour. (6) Fold in chopped apples and walnuts. (7) Pour into prepared pan and bake at 175C for about 40 mins. (9) Leave the cake to cool completely on a wire rack. butter 1/2 tsp. bicarbonate of soda. (5) Fold in flour mixture alternately with buttermilk. vanilla essence 2/3 cup Buttermilk 2 nos. vanilla essence 1 Tbsp. (4) Add in eggs one at a time and mix till well combined. or till skewer inserted comes out clean. salt 2 large eggs 1 tsp.
